This is a good snack to make with leftover potatoes.
All you need is potatoes – boiled and sliced, an onion – chopped, and a few rashers of bacon. I also added some chopped parsley.
Sweat off the onion in a suitable pan using oil or butter, snip the bacon rashers into it, and give it a stir.
When the onion is sweated off and the bacon cooked, add the cooked potato slices and fry the whole lot up until it’s thoroughly hot.
Some people serve this sort of dish topped with a fried egg but it’s nice enough without one. I tend to think of this a breakfast dish but you could also serve it as a snack or a side dish.
